Canned chickpeas is a popular food product, this canned vegetable can usually be left at room temperature for 1-2 years, so do you know how it is kept at room temperature for a long period of time without deterioration? First of all, it is to achieve the standard of commercial sterility of canned products, therefore, the sterilization process of canned chickpeas is an important part of its production process, the purpose is to ensure the safety of the food in the can and extend the shelf life. The process of sterilizing canned chickpea food is generally as follows:

1. Pre-treatment: Before starting the sterilization process, the cans need to go through a series of pre-treatment steps, including preparation of ingredients, screening, cleaning, soaking, peeling, steaming and seasoning and filling. These steps ensure the cleanliness of the pre-processing of the food and to ensure the flavor of the cans.

2. Sealing: The pre-processed ingredients are packed into cans with appropriate amount of stock or water. Then seal the cans to ensure an airtight environment to prevent bacterial contamination.

3. Sterilization: Put the sealed cans into the retort for high temperature sterilization. The specific sterilization temperature and time will vary according to different production requirements and the weight of the cans. Generally speaking, the sterilization temperature will reach about 121and keep it for a period of time to ensure that the bacteria in the cans are completely killed and reach the requirement of commercial sterility.

4. Storage: Once the sterilization is completed, then remove cans from the sterilization equipment, stored under appropriate conditions to maintain their quality and extend their shelf life.

It should be noted that the sterilization process of canned chickpeas may vary depending on the specific production process and manufacturer. Therefore, relevant food safety standards and regulations should be followed during the production process to ensure the quality and safety of the product.

In addition, for consumers, when purchasing canned food, they should pay attention to checking the sealing of the cans and the information on the labels, such as the production date and shelf-life, to ensure that they are purchasing safe and qualified products. Meanwhile, they should also pay attention to check whether the canned food has any abnormalities such as swelling and deformation before consumption.
